- Heat 1 tbsp olive oil in a pan.
- Add 2 cups chopped red bell peppers,2 cups diced tomatoes, 1 tsp each of pepper powder & salt.
- Cover & cook for 20-25 mins on low-medium heat, stirring once in between.
- Add 1/2 tsp each of onion & garlic powders, 4-5 fresh basil leaves, cook for 3-4 mins, cool and blend the sauce into smooth consistency.
- Transfer the ready sauce into a bowl, set aside.
- Boil 500 ml water, add 1 tsp salt, 2 cups pasta, cook for 8-10 mins.
- Pasta is done, reserve 2-4 tbsp of pasta water for later use.
- Drain cooked pasta, add 1 tsp olive oil and keep aside.
- Heat 1 tbsp oil in another pan, add 2 tsp minced garlic and saute for few seconds.
- Add 1/4 cup each of yellow & green peppers, saute for a few mins.
- Add 1/2 cup ready red sauce.
- Add the cooked pasta, 1 tsp each of dried oregano,parsley,pepper powder and salt,toss till the pasta gets well coated with the sauce.
- Add the reserved pasta water, mix well, take off heat.
- Garnish with fresh basil leaves, serve hot.
